Ingredients
  

  • 8 oz dried noodles such as soba or ramen
  • 1/4 cup creamy peanut butter smooth or crunchy
  • 2 tbsp soy sauce low-sodium preferred
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sriracha adjust to taste
  • 1 clove garlic minced
  • 1 tsp ginger freshly grated
  • 1/4 cup water to thin sauce
  • 2 tbsp green onions sliced, for garnish
  • 1 tbsp sesame seeds for garnish

Method
 

  1. Bring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually about 5-7 minutes.
  2. While the noodles are cooking, prepare the sauce. In a small bowl, combine the peanut butter, soy sauce, rice vinegar, honey, sriracha, minced garlic, and grated ginger. Whisk until smooth. Gradually add water to achieve your desired sauce consistency.
  3. Once the noodles are cooked, drain them and return them to the pot. Pour the peanut butter sauce over the noodles and toss to coat evenly.
  4. Serve immediately, garnished with sliced green onions and sesame seeds.
