Ingredients

  • 1/4 cup soy sauce low-sodium preferred
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 clove garlic minced
  • 1 tsp ginger grated
  • 2 tbsp olive oil
  • 1 lemon lemon juiced and zested
  • 1 tsp dried oregano
  • 1 tbsp Dijon mustard
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika

Equipment

  • Mixing bowls
  • Whisk
  • Grill, oven, or skillet

Method

  1. For the Asian-inspired marinade, mix soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a bowl. Add salmon fillets and marinate for at least 30 minutes, up to 2 hours in the refrigerator.
  2. For the Mediterranean marinade, combine olive oil, lemon juice and zest, and dried oregano. Marinate salmon for 30 minutes to 2 hours in the refrigerator.
  3. For the Smoky Maple marinade, whisk together Dijon mustard, maple syrup, apple cider vinegar, and smoked paprika. Marinate salmon for 30 minutes to 2 hours in the refrigerator.
  4. After marinating, remove salmon from the marinade and cook as desired. Grill at 400°F for about 10-12 minutes, bake at 375°F for 15-20 minutes, or pan-sear over medium-high heat for 4-5 minutes per side.

Notes

Chef's Tips:
• For a deeper flavor, let the salmon marinate for the full 2 hours.
• Avoid over-marinating as the acidity can start to 'cook' the fish.
• Serve with a fresh salad or roasted vegetables for a complete meal.
Food Safety:
• Always marinate in the refrigerator to prevent bacterial growth.
• Do not reuse marinade that has come into contact with raw fish unless boiled first.
