Ingredients
  

  • 2 cups all-purpose flour Sifted for best results
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter Softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt Or sour cream
  • 2 cups apples Peeled, cored, and diced
  • 1/2 cup walnuts Chopped, optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg. Set aside.
  3. In a large bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes. Add 2 large eggs one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract and 1/4 cup of plain yogurt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in 2 cups of diced apples and 1/2 cup of chopped walnuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
