Authentic Hungarian Goulash

Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 3 tbsp vegetable oil
  • 2 large onions finely chopped
  • 3 cloves garlic minced
  • 3 tbsp sweet Hungarian paprika
  • 1 tsp caraway seeds
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 2 large potatoes peeled and cubed
  • 2 large carrots sliced
  • 1 large red bell pepper diced
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Heat the vegetable oil in a large Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides, about 8-10 minutes. Remove the beef and set aside.
  2. Reduce the heat to medium and add the onions to the same pot. Sauté until they are soft and translucent, about 5 minutes. Add the garlic and cook for another minute.
  3. Stir in the sweet Hungarian paprika, caraway seeds, and tomato paste. Cook for 2 minutes, stirring constantly to prevent burning.
  4. Return the browned beef to the pot and pour in the beef broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 hours, stirring occasionally.
  5. After 1.5 hours, add the potatoes, carrots, and red bell pepper to the pot. Season with salt and black pepper. Continue to simmer, covered, for another 30 minutes or until the vegetables are tender and the beef is fork-tender.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.

Notes

• For a deeper flavor, marinate the beef in a mixture of paprika, garlic, and oil overnight.
• Avoid using high heat when adding paprika to prevent bitterness.
• Serve with a dollop of sour cream for added richness.
