- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet over medium heat, cook the ground beef until browned, about 8-10 minutes. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent, about 5 minutes.
- Stir in the diced tomatoes, black beans, corn, chili powder, cumin, oregano, salt, and pepper. Simmer for 10 minutes, allowing the flavors to meld.
- In a separate bowl, whisk together the cornmeal, milk, melted butter, and egg until smooth.
- Spread half of the cornmeal mixture into the bottom of the prepared baking dish. Pour the beef mixture over the cornmeal base, then top with half of the shredded cheese.
- Spoon the remaining cornmeal mixture over the top, spreading evenly. Sprinkle the remaining cheese on top.
- Bake for 30-35 minutes, or until the cornmeal crust is golden and set. Let the tamale pie cool for 10 minutes before serving.
