Authentic Swedish Meatballs

Ingredients
  

  • 1/2 pound ground beef 80/20 lean/fat ratio recommended
  • 1/2 pound ground pork
  • 1/2 cup breadcrumbs preferably fresh
  • 1/4 cup milk whole milk for richness
  • 1 egg large
  • 1 small onion finely chopped
  • 2 tablespoons butter for sautéing and gravy
  • 1 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons flour for gravy
  • 2 cups beef broth
  • 1/2 cup heavy cream
  • 1 tablespoon soy sauce optional, for added depth
  • 1 tablespoon lingonberry jam for serving

Method
 

  1. In a small skillet, melt 1 tablespoon of butter over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Let cool slightly.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, sautéed onion, salt, allspice, and nutmeg. Mix until well combined but avoid overmixing to keep the meatballs tender.
  3. Shape the mixture into 1-inch meatballs. You should get about 20-24 meatballs.
  4. In a large skillet, melt the remaining tablespoon of butter over medium-high heat. Add the meatballs in batches, browning them on all sides, about 6-8 minutes per batch. Remove the meatballs and set aside.
  5. To make the gravy, reduce the heat to medium and add the flour to the skillet, stirring to create a roux. Cook for 2 minutes, then gradually whisk in the beef broth, scraping up any browned bits from the bottom of the skillet.
  6. Bring the gravy to a simmer, then reduce heat to low and stir in the heavy cream and soy sauce. Return the meatballs to the skillet, cover, and simmer for 10 minutes, or until the meatballs are cooked through.
  7. Serve the Swedish meatballs hot, with a dollop of lingonberry jam on the side.
