Ingredients
  

  • 4 salmon fillets 6 oz each, skin-on or skinless
  • 1 package Boursin cheese Garlic & Fine Herbs flavor
  • 1 pound asparagus trimmed
  • 1 pound baby potatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice freshly squeezed
  • 2 cloves garlic minced
  • Fresh herbs parsley, dill, or chives for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). While the oven heats, prepare your ingredients.
  2. In a large bowl, toss the baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet.
  3. Bake the potatoes for 10 minutes to give them a head start.
  4. Meanwhile, in the same bowl, toss the asparagus with the remaining olive oil, salt, and pepper.
  5. After the potatoes have baked for 10 minutes, remove the baking sheet from the oven. Push the potatoes to one side and arrange the asparagus on the other side.
  6. Place the salmon fillets in the center of the baking sheet. Season the salmon with salt, pepper, and lemon zest.
  7. Spread a generous amount of Boursin cheese over each salmon fillet, pressing it down gently to adhere.
  8. Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  9. Remove from the oven, drizzle with lemon juice, and garnish with fresh herbs before serving.

Notes

• For best results, use fresh salmon fillets. Frozen can work but may require additional cooking time.
• Avoid overcooking the salmon to prevent it from drying out. Check for doneness early.
