Ingredients

  • 2 medium zucchinis sliced into 1/4-inch rounds
  • 2 large tomatoes sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup shredded mozzarella cheese optional
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Equipment

  • Baking dish
  • Mixing bowl
  • Measuring spoons
  • Knife and cutting board

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a small bowl, mix together the olive oil, balsamic vinegar, minced garlic, oregano, basil, and red pepper flakes if using. This marinade will enhance the flavors of the vegetables.
  3. Arrange the zucchini and tomato slices in the baking dish, alternating them in a single layer. Season with salt and pepper.
  4. Drizzle the balsamic marinade evenly over the vegetables. Ensure each slice is coated for maximum flavor.
  5. Cover the dish with foil and bake for 25 minutes. This allows the vegetables to steam and soften while absorbing the flavors.
  6. Remove the foil, sprinkle with mozzarella cheese if desired, and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  7. Garnish with fresh basil before serving. Enjoy your Balsamic Zucchini Tomato Bake hot or at room temperature.
