Ingredients
  

  • 1 lb ground turkey 93% lean recommended
  • 1 cup jasmine rice rinsed
  • 1.5 cups water for cooking rice
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce low-sodium preferred
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 cup shredded carrots
  • 1/2 cup cilantro chopped

Method
 

  1. Cook the rice: In a medium saucepan, combine the rinsed jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed and the rice is tender. Remove from heat and let sit, covered, for 5 minutes before fluffing with a fork.
  2. Prepare the bang bang sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until well combined. Adjust the sriracha to your desired level of heat. Set aside.
  3. Cook the turkey: Heat the vegetable oil in a large skillet over medium-high heat. Add the ground turkey, breaking it up with a spatula. Cook for 5-7 minutes until browned and cooked through.
  4. Add flavor: Stir in the minced garlic, grated ginger, and soy sauce. Cook for another 2 minutes, stirring frequently to prevent burning.
  5. Assemble the bowls: Divide the cooked rice among four bowls. Top each bowl with the cooked ground turkey, diced red bell pepper, shredded carrots, and sliced green onions.
  6. Finish with sauce and garnishes: Drizzle the bang bang sauce over the bowls. Garnish with chopped cilantro and serve with lime wedges on the side for squeezing over the dish.
