Ingredients
  

  • 4 large bell peppers Choose a mix of colors for visual appeal
  • 1 lb ground beef 80/20 lean/fat ratio recommended
  • 1 cup cooked rice White or brown rice works well
  • 1 small onion Finely chopped
  • 2 cloves garlic Minced
  • 1 can diced tomatoes 14.5 oz, with juice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheese Cheddar or mozzarella
  • 2 tbsp olive oil For sautéing

Method
 

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 7-8 minutes. Drain any excess fat.
  4. Stir in the cooked rice, diced tomatoes with their juice, oregano, basil, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.
  5. Spoon the beef and rice mixture into the prepared bell peppers, filling them to the top. Sprinkle shredded cheese over the filling.
  6. Bake the stuffed peppers in the preheated oven for 30-35 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a few minutes before serving.

• For a softer texture, par-cook the peppers in boiling water for 5 minutes before stuffing
• Avoid overfilling the peppers to prevent them from toppling over during baking
