  • 1 pound dried black eyed peas soaked overnight
  • 4 cups chicken broth low-sodium preferred
  • 1 cup heavy cream
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 ham hock or 1/2 pound bacon
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add the soaked black eyed peas to the pot along with the ham hock or bacon. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 45 minutes, or until the peas are tender.
  3. Once the peas are tender, remove the ham hock or bacon. If using bacon, you can chop it and return it to the pot. Stir in the heavy cream, smoked paprika, salt, and pepper. Simmer uncovered for another 15 minutes to allow the flavors to meld and the sauce to thicken.
  4. Taste and adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.
