Method
- Soak the black eyed peas overnight in water, or use the quick soak method by boiling for 2 minutes, then letting them sit for 1 hour. Drain and rinse the peas.
- In a large pot, add the ham hock, chopped onion, minced garlic, salt, black pepper, and cayenne pepper. Pour in the water or chicken broth and bring to a boil.
- Add the soaked and drained black eyed peas to the pot. Reduce heat to a simmer, cover, and let cook for about 1.5 hours, or until the peas are tender.
- Once the peas are cooked, remove the ham hock and let it cool slightly. Shred the meat and return it to the pot, discarding the bone and fat.
- Adjust seasoning to taste. Serve hot, garnished with fresh parsley or green onions if desired.
Notes
Chef's Tips:
• For a vegetarian version, use vegetable broth and smoked paprika instead of ham hock.
• Avoid overcooking the peas to prevent them from becoming mushy.
• Serve with cornbread for a traditional Southern meal.
Food Safety:
• Ensure the peas are cooked to an internal temperature of 165°F for food safety.
• Store leftovers in the refrigerator within two hours of cooking.
