Ingredients
  

  • 1 pound portobello mushrooms finely chopped
  • 1 cup oats gluten-free certified
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 4 gluten-free burger buns
  • toppings of choice lettuce, tomato, avocado, vegan mayo

Method
 

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
  2. Add the minced garlic and cook for another 1-2 minutes until fragrant. Stir in the chopped mushrooms and cook for 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.
  3. Transfer the mushroom mixture to a large bowl. Stir in the oats, soy sauce, smoked paprika, black pepper, and chopped parsley. Mix well to combine.
  4. Let the mixture sit for 5-10 minutes to allow the oats to absorb the moisture. This helps the burgers hold together better.
  5. Form the mixture into 4 equal-sized patties, about 3/4 inch thick. If the mixture is too wet, add a bit more oats; if too dry, add a splash of water.
  6. Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown and heated through.
  7. Serve the mushroom burgers on gluten-free buns with your favorite toppings.

Notes

• For a firmer texture, refrigerate the formed patties for 30 minutes before cooking
• Avoid over-handling the patties to prevent them from falling apart
