Method
 

  1. Preheat your oven to 450°F (230°C). This high heat is crucial for searing the roast initially, locking in the juices.
  2. In a small bowl, mix together the olive oil, salt, pepper, minced garlic, rosemary, and thyme to create a flavorful rub. Apply this mixture evenly over the entire surface of the prime rib, ensuring every inch is coated.
  3. Place the seasoned roast on a rack in a roasting pan, fat side up. This allows for even cooking and helps render the fat.
  4. Roast the prime rib at 450°F for 15 minutes to sear the exterior. Then, reduce the oven temperature to 325°F (160°C) and continue cooking for about 15 minutes per pound for medium-rare, or until the internal temperature reaches 135°F (57°C).
  5. Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This resting period is essential for redistributing the juices throughout the meat. Slice and serve your perfectly cooked boneless prime rib.
