Broccoli and Cheddar Twice-Baked Potatoes

Ingredients
  

  • 4 large Russet potatoes Scrubbed clean
  • 1 cup Broccoli florets Chopped into small pieces
  • 1 cup Cheddar cheese Shredded, divided
  • 1/2 cup Sour cream
  • 1/4 cup Milk
  • 2 tbsp Butter
  • 2 cloves Garlic Minced
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Chives Finely chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Pierce the Russet potatoes with a fork several times and place them directly on the oven rack. Bake for about 45-60 minutes, or until tender when pierced with a knife.
  2. While the potatoes are baking, steam the Broccoli florets for about 3-4 minutes until just tender. Drain and set aside.
  3. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and carefully scoop out the flesh, leaving about a 1/4-inch thick shell. Place the potato flesh in a large bowl.
  4. To the bowl with the potato flesh, add Sour cream, Milk, Butter, Garlic, Salt, and Black pepper. Mash until smooth and well combined.
  5. Fold in the steamed Broccoli florets and half of the Cheddar cheese into the mashed potato mixture.
  6. Spoon the mixture back into the potato skins, mounding it slightly. Sprinkle the remaining Cheddar cheese over the top of each potato.
  7. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with Chives, and serve hot.

Notes

• For a creamier texture, use whole milk or even heavy cream
• Avoid overmixing the potato mixture to prevent it from becoming gluey
