Ingredients
  

  • 4 boneless, skinless chicken breasts about 6 ounces each
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with olive oil.
  2. Season the chicken breasts with salt and pepper on both sides and arrange them in the baking dish.
  3. In a medium bowl, combine the cherry tomatoes, olive oil, garlic, fresh basil, and dried oregano. Mix well to coat the tomatoes evenly.
  4. Spoon the tomato mixture over the chicken breasts, distributing it evenly.
  5. Bake in the preheated oven for 25 minutes. The chicken should reach an internal temperature of 165°F (74°C).
  6. Remove the dish from the oven, sprinkle the mozzarella cheese and Parmesan cheese over the chicken, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Let the dish rest for 5 minutes before serving to allow the juices to redistribute within the chicken.
