  • 4 large portobello mushrooms stems removed and gills scraped out
  • 1 cup fresh mozzarella diced into small cubes
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves torn into pieces
  • 2 tablespoons balsamic glaze for drizzling
  • 2 tablespoons olive oil for brushing
  • 1 clove garlic minced
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Brush the portobello mushrooms with olive oil on both sides and season with salt and pepper. Place them gill-side up on the prepared baking sheet.
  3. In a bowl, mix the diced mozzarella, halved cherry tomatoes, torn basil, and minced garlic. Season with a pinch of salt and pepper.
  4. Evenly distribute the mozzarella mixture among the mushroom caps, pressing it down slightly to ensure it stays in place.
  5. Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
  6. Remove from the oven and let them cool for a few minutes. Drizzle with balsamic glaze before serving.
