- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20 minutes until they are caramelized and golden brown.
- In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the mushrooms and cook for about 5-7 minutes until they release their moisture and start to brown. Add the minced garlic and cook for another minute.
- Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the dough to a pizza peel or baking sheet.
- Spread the caramelized onions evenly over the dough, followed by the sautéed mushrooms and garlic. Sprinkle the mozzarella and Parmesan cheeses over the top, and finish with fresh thyme leaves. Season with salt and pepper to taste.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly. If using a pizza stone, slide the pizza onto the stone for baking.
- Remove the pizza from the oven, let it cool for a few minutes, then slice and serve.
