Ingredients
  

  • 6 cups mixed greens washed and dried
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1/2 cup red onion thinly sliced
  • 1 cup cucumber sliced
  • 1/2 cup roasted cashews
  • 1/4 cup sesame seeds toasted
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger grated

Method
 

  1. In a large salad bowl, combine the mixed greens, shredded carrots, red bell pepper, red onion, and cucumber. Toss gently to mix.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger to make the dressing.
  3. Drizzle the dressing over the salad and toss to coat evenly.
  4. Sprinkle the roasted cashews and toasted sesame seeds over the top of the salad just before serving.
