Ingredients
  

  • 1 lb ground beef 80/20 lean recommended for flavor
  • 1 cup long-grain white rice rinsed to remove excess starch
  • 1 packet taco seasoning or homemade blend
  • 2 cups beef broth low-sodium preferred
  • 1 cup salsa choose your heat level
  • 1 cup shredded cheddar cheese or Mexican blend
  • 1/2 cup diced tomatoes fresh or canned
  • 1/4 cup sliced green onions for garnish
  • 1/4 cup chopped fresh cilantro for garnish

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  2. Add the rinsed rice to the skillet and stir to combine with the beef. Cook for 1-2 minutes, allowing the rice to toast slightly.
  3. Stir in the taco seasoning, beef broth, and salsa. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and has absorbed the liquid.
  4. Remove the skillet from heat. Sprinkle the shredded cheese evenly over the top of the rice mixture. Cover and let sit for 3-5 minutes, allowing the cheese to melt.
  5. Garnish with diced tomatoes, sliced green onions, and chopped cilantro before serving.

Notes

Chef's Tips:
• For a creamier texture, stir in 1/4 cup of sour cream after cooking
• Avoid over-stirring the rice mixture to prevent a mushy texture
• Serve with tortilla chips for added crunch
