Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 2 cups apples peeled, cored, and diced
  • 1/2 cup chopped walnuts optional

Equipment

  • 9x5-inch loaf pan
  • Mixing bowls
  • Electric mixer
  • Whisk
  • Spatula
  • Toothpick or cake tester

Method

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside. Trust me, proper greasing prevents sticking and ensures a perfect release.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Tip from me: Sifting these dry ingredients helps to aerate them, resulting in a lighter texture.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and yogurt. Believe me, room temperature ingredients mix more smoothly.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced apples and walnuts if using. Now comes the fun part—watching the batter come together with those delicious chunks of apple!
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Step back and admire your beautifully baked Cinnamon Apple Bread before slicing and serving.

Notes

Chef's Tips:
• For best results, use a mix of tart and sweet apples like Granny Smith and Honeycrisp.
• Common mistake to avoid: Overmixing the batter can lead to a dense bread.
• Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
Food Safety:
• Ensure apples are thoroughly washed before use to remove any potential contaminants.
• Store leftovers in an airtight container to prevent spoilage.
