Ingredients
  

  • 4 oz cream cheese softened to room temperature
  • 1/4 cup butter unsalted, softened to room temperature
  • 1 cup powdered sugar sifted
  • 1/2 tsp vanilla extract
  • 1/8 tsp lemon extract optional, for added tanginess

Method
 

  1. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. This should take about 2-3 minutes using a hand mixer on medium speed.
  2. Gradually add the powdered sugar to the cream cheese mixture, beating on low speed to prevent the sugar from flying out of the bowl. Once all the sugar is incorporated, increase the speed to medium-high and beat until light and fluffy, about 2 minutes.
  3. Add the vanilla extract and, if using, lemon extract. Beat until well combined, about 1 minute.
  4. Use immediately or store in an airtight container in the refrigerator for up to one week. Allow to come to room temperature before using for best spreading consistency.

Notes

• For a thicker frosting, add more powdered sugar. For a thinner consistency, add a teaspoon of milk at a time until desired consistency is reached.
