Ingredients
  

  • 1 lb ground chicken preferably thigh meat for juicier meatballs
  • 1/2 cup breadcrumbs plain or seasoned
  • 1 egg
  • 2 cloves garlic minced
  • 1/4 cup parsley finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 8 oz mushrooms sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp flour
  • 1 tsp thyme dried or fresh

Method
 

  1. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix until well combined. Form into 1-inch meatballs.
  2. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 6-8 minutes. Remove meatballs from the skillet and set aside.
  3. In the same skillet, add sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
  4. Sprinkle flour over the mushrooms and stir to coat. Cook for 1 minute to remove the raw flour taste.
  5. Slowly pour in chicken broth, stirring constantly to avoid lumps. Bring to a simmer.
  6. Add heavy cream and thyme to the skillet. Stir to combine and bring to a simmer.
  7. Return meatballs to the skillet, spooning sauce over them. Simmer for 5 minutes, or until meatballs are cooked through and sauce has thickened.
