- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove the chicken and set aside.
- In the same skillet, add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes. Add the minced garlic and cook for another minute.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and thyme, then bring the sauce to a simmer. Let it cook for about 5 minutes, or until it thickens slightly.
- While the sauce is simmering, boil the potatoes in salted water until tender, about 15 minutes. Drain the potatoes and mash them with the milk and 1/4 cup of butter until smooth and creamy. Season with salt and pepper to taste.
- Return the chicken to the skillet with the sauce, spooning some sauce over the top. Let it simmer for another 2-3 minutes to heat through.
- Serve the chicken and mushroom sauce over the mashed potatoes. Garnish with fresh parsley before serving.
