- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and have released their moisture, about 7 minutes.
- Stir in the Arborio rice and cook for 2 minutes, ensuring the rice is well coated with the oil and butter mixture.
- If using, pour in the white wine and stir until it's mostly absorbed by the rice.
- Begin adding the warm broth, one cup at a time, stirring frequently. Wait until each addition is almost fully absorbed before adding the next. This process should take about 20 minutes.
- Once the rice is creamy and cooked to al dente, remove from heat. Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve the risotto hot, garnished with fresh parsley.
