- In a large pot, melt the butter over medium heat. Add the onions and cook until they become translucent, about 5 minutes.
- Add the garlic and mushrooms, and cook until the mushrooms release their moisture and start to brown, about 10 minutes.
- Sprinkle the flour over the mushrooms and stir well to combine. Cook for 2 minutes to remove the raw flour taste.
- Slowly pour in the broth, stirring constantly to avoid lumps. Bring the soup to a simmer and cook for 15 minutes.
- Stir in the heavy cream and thyme. Let the soup simmer for another 5 minutes. Season with salt and pepper to taste.
- Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches. Serve hot.
