  • 1 cup polenta coarse-ground cornmeal
  • 4 cups chicken or vegetable broth low-sodium preferred
  • 1/2 cup heavy cream optional for extra creaminess
  • 1/2 cup Parmesan cheese grated
  • 2 tbsp butter unsalted
  • 1 lb mushrooms mixed variety, sliced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme chopped
  • Salt and pepper to taste

Method
 

  1. In a large saucepan, bring the broth to a boil. Gradually whisk in the polenta, stirring constantly to avoid lumps. Reduce heat to low and simmer, stirring frequently, for about 25-30 minutes until the polenta is thick and creamy.
  2. While the polenta cooks, heat olive oil in a large skillet over medium-high heat. Add the mushrooms and cook until they release their moisture and start to brown, about 8-10 minutes.
  3. Add garlic and thyme to the mushrooms, and cook for another 2 minutes. Season with salt and pepper to taste.
  4. Once the polenta is cooked, stir in the heavy cream, butter, and Parmesan cheese until well combined and creamy. Season with salt and pepper to taste.
  5. Serve the polenta in bowls, topped with the sautéed mushrooms. Garnish with additional thyme or Parmesan if desired.
