Ingredients
  

  • 1 pound dried black eyed peas rinsed and sorted
  • 6 slices bacon chopped
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth low-sodium
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper optional for heat
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup heavy cream

Method
 

  1. In a large pot, cook the bacon over medium heat until crispy, about 8 minutes. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Add the onion to the pot and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
  3. Add the black eyed peas, chicken broth, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes to an hour, or until the peas are tender.
  4. Once the peas are cooked, stir in the heavy cream and the reserved bacon. Let the mixture simmer for an additional 10 minutes to allow the flavors to meld and the sauce to thicken.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
