  • 1 pound gnocchi fresh or shelf-stable
  • 2 tablespoons olive oil
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5-7 minutes until they release their moisture and start to brown.
  2. Add the minced garlic and smoked paprika to the skillet, stirring constantly for about 1 minute until fragrant. Be careful not to burn the garlic.
  3. Pour in the heavy cream, stirring to combine with the mushrooms and spices. Let the sauce simmer for 2-3 minutes until slightly thickened.
  4. Meanwhile, cook the gnocchi according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.
  5. Add the cooked gnocchi to the skillet with the cream sauce, tossing gently to coat. Stir in the fresh spinach and cook for another 1-2 minutes until wilted.
  6. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  7. Serve immediately, garnished with fresh parsley.
