Ingredients
  

  • 1 pound large shrimp peeled and deveined, tail on
  • 1 cup all-purpose flour
  • 1 cup cold sparkling water or club soda
  • 1 large egg cold
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • vegetable oil for frying

Method
 

  1. Prepare the shrimp by making a few shallow cuts along the belly to prevent curling during frying. Pat them dry with paper towels.
  2. In a bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the cold egg and then mix in the cold sparkling water.
  3. Combine the wet and dry ingredients, stirring gently to avoid overmixing. The batter should be lumpy and thin.
  4. Heat the oil in a deep fryer or large pot to 350°F (175°C). Dip each shrimp into the batter, letting excess drip off, and carefully lower into the hot oil.
  5. Fry the shrimp until they are golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Serve immediately with your favorite dipping sauce.
