  • 1 pound smoked sausage sliced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups cooked rice for serving

Method
 

  1. Place the rinsed black-eyed peas in the slow cooker. Add the chopped onion, bell pepper, celery, and minced garlic.
  2. Add the sliced smoked sausage to the slow cooker. Pour in the chicken broth, ensuring that the ingredients are well covered.
  3. Stir in the thyme, oregano, and bay leaf. Season with salt and pepper to taste.
  4. Cover and cook on low for 6 hours or until the black-eyed peas are tender.
  5. Once cooked, remove the bay leaf. Serve the Hoppin' John over cooked rice, garnishing with fresh herbs if desired.
