- Preheat your oven to 375°F (190°C). Spread the walnuts on a baking sheet and toast for about 8 minutes until fragrant. Let them cool.
- In a food processor, pulse the toasted walnuts until finely chopped. Add the mushrooms, black beans, oats, soy sauce, smoked paprika, garlic powder, onion powder, and black pepper. Pulse until the mixture comes together but still has some texture.
- Form the mixture into 4 patties. If the mixture is too wet, add more oats; if too dry, add a bit of water.
- Heat the olive oil in a large skillet over medium heat. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
- Serve the burgers on your favorite buns with your choice of toppings and enjoy!
