- Rehydrate the dried porcini mushrooms in 1 cup of hot water for about 20 minutes. Strain the mushrooms, reserving the liquid. Chop the mushrooms finely.
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the Arborio rice to the pan, stirring to coat the grains with oil. Cook for 2-3 minutes until the rice is lightly toasted.
- Pour in the white wine, stirring constantly until the wine is fully absorbed by the rice.
- Begin adding the warm broth, one ladle at a time, stirring frequently. Allow each addition of broth to be absorbed before adding the next. This process should take about 18-20 minutes.
- After about 15 minutes of cooking, add the chopped rehydrated porcini mushrooms and the reserved mushroom liquid. Continue stirring and adding broth until the rice is creamy and al dente.
- Once the rice is cooked, remove from heat. Stir in the grated Parmesan cheese and butter until melted and well combined. Season with salt and pepper to taste.
- Serve the risotto immediately, garnished with fresh parsley.
