  • 1 quart fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar plus more for biscuits
  • 2 1/3 cups Original Bisquick mix
  • 1/2 cup milk plus 1 tablespoon for brushing
  • 3 tbsp granulated sugar for biscuit topping
  • 3 tbsp butter melted
  • 1 cup heavy whipping cream cold
  • 2 tbsp powdered sugar
  • 1 tsp pure vanilla extract

Method
 

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. In a medium bowl, combine the sliced strawberries and 1/4 cup granulated sugar. Stir gently, then set aside to macerate. This draws out the berries' natural juices, creating a delicious syrup.
  2. In a separate bowl, stir the Bisquick mix, 1/2 cup of milk, and the melted butter together with a fork just until a soft dough forms. Don't overmix—this is the secret to tender biscuits. The dough will be slightly sticky.
  3. Turn the dough out onto a surface lightly dusted with Bisquick mix. Gently pat or roll the dough to 1/2-inch thickness. Using a 3-inch round cutter or a glass, cut out 6 biscuits. Place them 2 inches apart on the prepared baking sheet.
  4. Brush the tops of the biscuits lightly with the remaining tablespoon of milk, then sprinkle generously with the 3 tablespoons of sugar. This creates a beautiful, sweet, crackly top. Bake for 10-12 minutes, or until the tops are golden brown.
  5. While the biscuits bake, make the whipped cream. In a chilled bowl, beat the cold heavy cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until stiff peaks form. Chill until ready to use.
  6. Let the biscuits cool on the pan for 5 minutes. To assemble, split a warm biscuit in half. Spoon macerated strawberries and their juices over the bottom half, top with a generous dollop of whipped cream, and crown with the biscuit top. Serve immediately.
