- Preheat your oven to 375°F (190°C). In a large oven-safe skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 8 minutes. Drain any excess fat.
- Add the minced garlic, cumin, and chili powder to the skillet, stirring to combine. Cook for an additional 1-2 minutes until fragrant.
- Stir in the enchilada sauce and diced green chilies, bringing the mixture to a simmer. Reduce heat to low and let it simmer for 5 minutes to meld the flavors.
- Remove the skillet from heat. Place the tortillas on a flat surface and divide half of the shredded cheese evenly among them. Spoon the beef mixture onto each tortilla, then roll them up and place them seam-side down in the skillet.
- Sprinkle the remaining cheese over the top of the enchiladas. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for 5 minutes, then garnish with fresh cilantro. Serve with lime wedges on the side.
