Easy Melted Cheese Mushroom Toast

Ingredients
  

  • 4 slices bread preferably thick-cut
  • 2 tbsp butter unsalted
  • 8 oz mushrooms sliced, any variety
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 cup cheese shredded, such as cheddar or mozzarella
  • 1 tsp thyme fresh or dried
  • to taste salt and pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Arrange the bread slices on a baking sheet and toast them in the oven for about 5 minutes until lightly golden.
  2. While the bread is toasting, heat the olive oil and 1 tablespoon of butter in a skillet over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are tender and browned. Add the minced garlic and thyme, cooking for another minute. Season with salt and pepper.
  3. Remove the toasted bread from the oven and spread the remaining butter on one side of each slice. Top the buttered side with the sautéed mushrooms, distributing them evenly.
  4. Sprinkle the shredded cheese over the mushrooms, covering them completely. Return the baking sheet to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
  5. Serve the mushroom toast immediately, while the cheese is still hot and gooey.

Notes

Chef's Tips:
• For a crispier toast, broil the bread for the last 1-2 minutes of cooking
• Avoid overcrowding the skillet when sautéing mushrooms to ensure they brown properly
