- Preheat your oven to 375°F (190°C). Line a sheet pan with parchment paper for easy cleanup.
- In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Create a well in the center.
- Add 1 cup of non-fat Greek yogurt into the well and mix until a dough forms. If the dough is too sticky, add a bit more flour; if too dry, add a bit more yogurt.
- On a floured surface, roll the dough into a rectangle about 1/4 inch thick.
- In a small bowl, mix 1/4 cup of brown sugar and 2 teaspoons of ground cinnamon. Spread this mixture evenly over the dough.
- Starting from one long side, roll the dough into a tight log. Cut the log into 12 even pieces.
- Place the rolls cut-side up on the prepared sheet pan, leaving space between them for expansion.
- Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
- While the rolls bake, prepare the glaze by whisking 1/4 cup of powdered sugar with 1-2 tablespoons of non-fat milk until smooth.
- Once the rolls are done, let them cool slightly, then drizzle with the glaze before serving.
