- In a large pot, melt the butter over medium heat. Add the onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Add the garlic and cook for another minute until fragrant. Stir in the chestnuts, thyme, and bay leaf, and cook for 2-3 minutes.
- Pour in the broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 30 minutes, or until the chestnuts are tender.
- Remove the bay leaf. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
- Stir in the heavy cream and heat through. Season with salt and pepper to taste. Serve hot.
