- Caramelize the onions. In a large skillet over medium-low heat, melt the butter with the olive oil. Add the thinly sliced onions and sprinkle with the sugar and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until deeply golden brown and soft. Stir in the thyme and sherry (if using), scraping up any browned bits. Add the beef broth and simmer for 3-4 minutes until most liquid is absorbed. Season with pepper, remove from heat, and let cool slightly.
- Prepare the pastry. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. On a lightly floured surface, roll the thawed puff pastry sheet into a 12x12 inch square. Using a sharp knife or pizza cutter, cut the pastry into 24 equal squares (a 6x4 grid).
- Assemble the bites. Place the pastry squares on the prepared baking sheet, leaving about 1/2 inch between them. Spoon about 1 heaping teaspoon of the cooled onion mixture onto the center of each square. Top each with a generous pinch of grated Gruyère cheese.
- Bake to perfection. In a small bowl, whisk the egg with 1 tablespoon of water to make an egg wash. Lightly brush the exposed edges of each pastry square with the egg wash. This will give them a beautiful golden shine. Bake for 18-22 minutes, or until the pastry is puffed and deep golden brown and the cheese is bubbly.
- Serve and enjoy. Let the bites cool on the baking sheet for 5 minutes before transferring to a serving platter. Trust me, this brief rest allows the filling to set slightly so it doesn't run out when you bite into it. Serve warm and watch them disappear!
