Fried Enoki Mushrooms

Ingredients
  

  • 8 oz enoki mushrooms trimmed and separated
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cold sparkling water

  • Deep fryer or deep pot
  • Kitchen thermometer

Method
 

  1. In a bowl, mix the flour, cornstarch, salt, and black pepper. Slowly whisk in the cold sparkling water until a smooth batter forms.
  2. Heat about 2 inches of vegetable oil in a deep pot or fryer to 350°F (175°C). Test the oil temperature with a kitchen thermometer for best results.
  3. Dip the enoki mushrooms into the batter, ensuring they are well-coated. Let excess batter drip off.
  4. Carefully lower the battered enoki mushrooms into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes until golden and crispy.
  5. Remove the fried enoki mushrooms with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately with your favorite dipping sauce.
