Ingredients
  

  • 1.5 pounds large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounces
  • 1/4 cup white wine optional
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 6 ounces feta cheese crumbled
  • 2 tablespoons fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 400°F (200°C). In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant. Stir in the diced tomatoes, white wine (if using), oregano, and red pepper flakes. Season with salt and pepper to taste. Let the mixture simmer for about 10 minutes to allow the flavors to meld.
  3. Nestle the shrimp into the tomato sauce, ensuring they are mostly submerged. Sprinkle the crumbled feta cheese evenly over the top of the dish.
  4. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the shrimp are pink and cooked through and the feta is slightly melted and golden.
  5. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley and serve with lemon wedges on the side.
