- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray.
- In a large skillet over medium heat, cook the ground turkey until browned, about 7-8 minutes. Break it up into small pieces as it cooks.
- Add the diced onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute.
- Add the diced sweet potatoes, chicken broth, thyme, paprika, salt, and pepper to the skillet. Stir well to combine. Bring the mixture to a simmer, then reduce heat to low and cover. Cook for 10 minutes, stirring occasionally, until the sweet potatoes start to soften.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- Transfer the turkey and sweet potato mixture to the prepared baking dish. Spread it out evenly.
- If using, sprinkle the shredded cheddar cheese over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the cheese is melted and bubbly.
- Remove from the oven and let the casserole rest for 5 minutes before serving.
