Ingredients

  • 4 cups all-purpose flour plus more for dusting
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast 1 packet
  • 1 cup pineapple juice warmed to 110°F
  • 1/4 cup unsalted butter melted
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1/2 cup brown sugar for filling
  • 2 tablespoons ground cinnamon for filling
  • 1/4 cup unsalted butter softened, for filling
  • 1/2 cup shredded coconut for filling
  • 1 cup powdered sugar for glaze
  • 2-3 tablespoons pineapple juice for glaze

Equipment

  • Large mixing bowl
  • Rolling Pin
  • 9x13 inch baking dish
  • Oven
  • Whisk

Method

  1. In a large mixing bowl, combine the warm pineapple juice and yeast. Let sit for about 5 minutes until foamy.
  2. Add sugar, melted butter, salt, and eggs to the yeast mixture. Stir to combine.
  3. Gradually add flour, mixing until a soft dough forms. Knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Punch down the dough and roll it out on a floured surface into a 12x18-inch rectangle.
  6. Spread softened butter evenly over the dough, then sprinkle with brown sugar, cinnamon, and shredded coconut.
  7. Roll up the dough tightly from the long side and cut into 12 equal pieces.
  8. Place the rolls in a greased 9x13-inch baking dish, cover, and let rise for another 30 minutes.
  9. Preheat oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.
  10. While the rolls are baking, prepare the glaze by whisking powdered sugar and pineapple juice until smooth.
  11. Once the rolls are done, let them cool slightly before drizzling with the pineapple glaze.

Notes

Chef's Tips:
• For best results, use fresh pineapple juice for a more vibrant flavor
• Avoid over-kneading the dough, as it can lead to tough rolls
• Serve warm for the best texture and flavor
Food Safety:
• Ensure the pineapple juice is warmed to the correct temperature to activate the yeast without killing it
• Store leftover rolls in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week
