- If using fresh salmon, preheat your oven to 400°F (200°C). Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until cooked through. Let it cool, then flake the salmon into a large bowl. If using canned salmon, simply drain and flake it into the bowl.
- Add the breadcrumbs, onion, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and black pepper to the bowl with the salmon. Mix until well combined.
- Form the mixture into 8 patties, about 1/2 inch thick. If the mixture is too wet, add more breadcrumbs; if too dry, add a bit more mayonnaise.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, add the salmon patties and cook for 4-5 minutes on each side, or until golden brown and crispy.
