Method
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain and set aside.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the Hen of the Woods mushrooms and sauté until they are golden brown and crispy, about 8-10 minutes. Season with salt and pepper to taste.
- Reduce the heat to medium and add the minced garlic to the skillet. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
- Pour in the heavy cream and broth, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
- Stir in the chopped tarragon and grated Parmesan cheese, mixing until the cheese is melted and the sauce is well combined. Taste and adjust seasoning with salt and pepper if needed.
- Add the cooked pasta to the skillet with the sauce and mushrooms. Toss everything together to ensure the pasta is evenly coated with the sauce. Serve immediately, garnished with additional tarragon and Parmesan if desired.
