Ingredients

  • 1 pound ground turkey preferably 93% lean
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fennel seeds lightly crushed
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes optional, for heat
  • 1 tablespoon olive oil for cooking

Equipment

  • Large mixing bowl
  • Large skillet
  • Meat thermometer

Method

  1. In a large bowl, combine the ground turkey, salt, black pepper, fennel seeds, sage, thyme, and red pepper flakes. Mix gently but thoroughly to ensure even distribution of spices.
  2. Form the mixture into 8 equal-sized patties, about 1/2 inch thick. If time allows, refrigerate the patties for 30 minutes to help them hold their shape better during cooking.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 5 minutes on each side, or until they reach an internal temperature of 165°F (74°C).

Notes

Chef's Tips:
• For a juicier sausage, consider adding a tablespoon of grated apple or onion to the mix.
• Avoid overmixing the meat to prevent tough patties.
• Serve with a side of fresh fruit for a balanced breakfast.
Food Safety:
• Ensure the internal temperature reaches 165°F (74°C) to kill any harmful bacteria.
• Store cooked sausage in the refrigerator for up to 3 days or freeze for up to 3 months.
