Ingredients
  

  • 4 tablespoons butter unsalted
  • 2 cups onions chopped
  • 1 pound mushrooms sliced, preferably cremini or button
  • 2 teaspoons dried dill weed
  • 1 tablespoon paprika preferably Hungarian sweet paprika
  • 1 tablespoon soy sauce
  • 2 cups chicken or vegetable broth
  • 1 cup milk whole or 2%
  • 3 tablespoons flour
  • 1 tablespoon lemon juice
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley chopped, for garnish
  • to taste salt and pepper

Method
 

  1. In a large pot, melt the butter over medium heat. Add the onions and sauté until they are soft and translucent, about 5 minutes.
  2. Add the mushrooms and cook until they release their juices and start to brown, about 8 minutes. Stir in the dill and paprika, cooking for another minute to release their flavors.
  3. Pour in the soy sauce and broth, bringing the mixture to a simmer. Let it cook for 10 minutes to allow the flavors to meld.
  4. In a small bowl, whisk together the milk and flour until smooth. Gradually stir this mixture into the soup, stirring constantly to avoid lumps. Simmer for an additional 5 minutes, or until the soup thickens.
  5. Remove the soup from heat and stir in the lemon juice and sour cream. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.
