Ingredients
  

  • 4 salmon fillets about 6 ounces each
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon lemon sliced, for serving
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, honey, dried thyme, salt, and black pepper to create the marinade.
  3. Place the salmon fillets on the prepared baking sheet, skin side down. Brush the marinade evenly over the top of each fillet.
  4. Roast the salmon in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
  5. Remove the salmon from the oven and let it rest for 5 minutes before serving. Garnish with lemon slices and chopped fresh parsley.
