Method
- Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Add the diced onion, garlic, carrots, and celery to the pot. Sauté until the vegetables begin to soften, about 5 minutes.
- Stir in the diced tomatoes with their juice, chicken broth, basil, oregano, and thyme. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
- Add the pasta to the soup and continue to simmer until the pasta is cooked, about 10 minutes.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese if desired.
Notes
Chef's Tips:
• For a thicker soup, mash some of the cooked vegetables before adding pasta.
• Avoid overcooking the pasta to prevent it from becoming mushy in leftovers.
• Serve with crusty bread to soak up the flavorful broth.
Food Safety:
• Ensure ground turkey is cooked to an internal temperature of 165°F (74°C).
• Refrigerate leftovers within two hours and consume within 3-4 days.
