Ingredients
  

  • 1 lb Italian sausage sweet or spicy, casings removed
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 14.5 oz diced tomatoes canned, with juices
  • 1 cup chicken broth
  • 1 lb gnocchi fresh or shelf-stable
  • 1 cup spinach fresh, roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1 tsp Italian seasoning

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  2. Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the diced tomatoes with their juices and the chicken broth. Bring the mixture to a simmer.
  4. Add the gnocchi to the skillet, stirring to ensure they are submerged in the liquid. Cover and cook for 5 minutes, or until the gnocchi are tender.
  5. Stir in the chopped spinach, heavy cream, and Italian seasoning. Cook for another 2-3 minutes until the spinach is wilted and the sauce has thickened slightly.
  6. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil if desired.
